Turnkey tomato & pepper processing lines

Tomato paste & pepper processing lines that turn the harvest into value.

Fresh tomatoes and peppers spoil within days, and a large share of the harvest never reaches the market. A Maticline processing line turns seasonal produce into paste, purée, sauces and pepper blends you can sell all year.

The processing line

Eight stages from fresh fruit to sealed pack

Each stage is sized to your daily intake and specified only after we have analysed your raw material. Pepper-specific steps are noted where the line differs.

  1. Receiving & unloading

Water flumes move fruit gently from crates or trucks into the line, limiting bruising.

  2. Washing & sorting

Bubble washers and rinse sprays remove soil and residue; a sorting belt removes green, rotten and damaged fruit.

  3. Crushing & break

Fruit is chopped and rapidly heated. A hot break gives thicker paste; a cold break keeps more fresh colour and flavour.

PepperDestemming and optional roasting before crushing.

  4. Pulping & refining

Pulper-finishers remove skins and seeds and set the smoothness of the final texture.

PepperColloid milling for a fine, even paste.

  5. Concentration

A vacuum evaporator removes water at low temperature, protecting colour and taste while reaching the target concentration.

  6. Formulation

Batching tanks blend concentrate with salt, sugar, spices, oil or onion for sauces and stew bases.

PepperAcidification to a safe pH before heat treatment.

  7. Sterilisation

Tubular heat exchangers sterilise the product, then cool it for aseptic or hot filling.

  8. Filling & packing

Aseptic bag filling for bulk, or hot-fill for tins, jars, pouches and sachets, followed by sealing, coding and cartoning.

Process before equipment

Why processors choose Maticline for tomato & pepper

  • Raw material firstWe analyse your varieties, solids content, colour and seasonality before selecting a single machine.
  • Built for the seasonProcess fresh fruit at full speed during harvest, store bulk concentrate aseptically, then blend and repack off-season so the plant runs all year.
  • One line, several productsTomato, pepper and blended products share washing, heating, CIP and utilities, raising return on the same investment.
  • Consumer-driven productsFormulations and packs designed around what local consumers buy, cook with and can afford.
  • Local supportInstallation, operator training, spare parts and optimisation from our teams in Africa.

Food safety by design

Peppers need a different process from tomatoes

Tomatoes are naturally acidic. Most peppers are not, so pepper pastes and blends must be acidified and heat-treated correctly to be safe on the shelf without refrigeration.

We engineer pH control, heat treatment and filling conditions into the line, with CIP cleaning and process monitoring so every batch meets the same standard.

Line configurations

A line sized to your sourcing and your market

Final capacity and equipment are confirmed after a raw-material analysis and feasibility study.

Frequently asked questions

Tomato & pepper line questions

What products can a tomato processing line make?

Tomato paste, tomato purée, ketchup and sauces, plus pepper paste, chilli sauce and tomato-pepper stew bases on the same line.

How can a tomato plant run outside the harvest season?

Fresh tomatoes are processed at full capacity during harvest and stored as bulk aseptic concentrate, which is then blended and repacked during the rest of the year.

Why do pepper products need a different process?

Most peppers are low-acid, unlike tomatoes. Pepper pastes and blends must be acidified and heat-treated correctly to be safe on the shelf without refrigeration.

Can I start small?

Yes. An entry configuration blends and packs bought-in concentrate, and can later be extended with fresh fruit processing.

Losing tomatoes and peppers every harvest? Let’s engineer the fix.
